It has been shown that popcorn is full of antioxidants. Breakfast cereals also contain relative large amounts of polyphenol. This was discovered by American scientists.
“I think popcorn is a healthy food”, says chemist Joe Vinson of the University of Scranton.
It was previously thought that the fibers in grains and popcorn had a positive influence on health, but according to Vinson polyphenol plays a much bigger role.
Tests have shown that 2,5 percent of the weight of the core of the popcorn consists of polyphenol. This was more than most breakfast cereals, that reach up to 0,5 percent and even more than hot breakfast products like porridge.
According to Vinson popcorn contains so much polyphenol because it is not refined. “The best would be to make your own breakfast from grains, nuts and dried fruit”, says Vinson.
Many breakfast cereals are produced in a manner that destroys many of the polyphenol.
