Marinades that contain herbs can reduce the amount of cancer causing compounds that are formed under the grill by up to 88 percent. According to the scientists the antioxidants in the herbs help to prevent the formation of the cancerous compounds. Ready made marinades showed the most effect.
When meat is exposed to heat, especially when it is burned, certain compounds are formed. These compounds can cause cancer according to some scientific studies. This research shows that that can be prevented by using a good marinade.
For the research steaks were put in a ready made marinade for one hour. Then the steaks were grilled on each side for 5 minutes on a grill of about 200 degrees Centigrade. For comparison there were also steaks that were grilled without being marinaded and steaks that were marinaded in a oil and vinegar mix.
