Broccoli, brussel sprouts and other members of the cabbage family contain glucosinolates, powerful cancer fighting nutrients. The down side is that these nutrients are partly lost by cooking the food. With cooked broccoli 23 percent is lost, with sprouts 42 percent and with colliflower 25 percent. If you want to preserve the glucosinolates it is better to steam, stir fry or cook to the food in the microwave. This way the nutrients are not lost.
